Salmon with Onion Marmalade

There a many sauces which are made with vinegar. Try this one for a real orange treat.

2 Salmon steaks or fillets
2 tablespoons olive oil
1/2 cup orange juice
1 medium red onion
1/4 cup Blood Orange vinegar
salt and pepper to taste
 

Cut red onion into 8 wedges. Heat oil in heavy bottomed saucepan. Add onion wedges and season with salt and pepper. Cook a few minutes, then add orange juice and Blood Orange vinegar. Cover and cook for 45 minutes over a low heat.
 

Season salmon with salt and pepper and saute in olive oil for 3 to 5 minutes on each side, depending on thickness.
 

Serve the salmon with the Onion Marmalade
